| 内容記述 | The‘ molten globule’ state has been regarded as an intermediate state between the native and denatured state of globular proteins. However, thermodynamically, the molten globule state is generally considered a denatured state, although, some notable exceptions have been reported. At pH 2, ovalbumin possesses features which are characteristics of the molten globule state, and this study provides additional evidence of molten globule-like features. An analysis by differential scanning calorimetry shows that the ovalbumin molecule at pH 2 resembles the native state more than the denatured state. The state of ovalbumin at pH 2 may be described as a molten globule, which is very similar to the native state | |||||||||
