A great deal of okara, soy milk residue, has been recently disposed as industrial waste. We have investigated on the manufacturing of processed food containing okara and the effect of okara on blood composition to make effective use of okara, The species and content of isoflavone in dried okara which we used as material of animal experiment and commercial okara were determined. Daidzein and genistein comprised most of total isoflavone. Whereas daidzein content was almost equal to genistein content in whole soybeans, the former was considerably more than the latter in okara. The difference of isoflavone contents depended on the cultivated year of soybean compared with the variety. It seems that drying method affected the quantitative difference of isoflavone form, glycon or aglycon. Therefore, the isoflavone content in okara might be influenced by cultivation condition of soybean and the form of isoflavone in okara might be affected by the processing method. |
