The effect of high pressure treatment on the water absorption of soybean and adzuki bean was investigated. The water absorption of soybeans was slightly accelerated by high pressure treatment at more than 200MPa for 10min. The water absorption of adzuki beans was considerably accelerated by high pressure treatment at more than 400MPa for 10min. The water absorption time of 3-4hrs was successful by the treatment. It was assumed that the acceleration of water absorption in adzuki beans largely depended on the crack at seed coat in the neighborhood of micropyle by high pressure treatment. |
